Healthy No Bake Cookies

1 c. creamy peanut butter
3/4 c. local honey
1/2 c. coconut oil
2 t. vanilla extract
3 c. rolled organic oats
6 T. cocoa powder

Combine the first 3 ingredients in a medium to large saucepan and warm on stovetop. Stir constantly until melted and well combined.

Add vanilla extract, oats, cocoa powder and stir well. Drop by spoonful onto wax paper and let cool.

Freeze them and the coconut oil sets, making them taste like ice cream bars!
