chewy gluten-free & vegan friendly sunflower brownies

1 c. creamy sunflower seed butter (can sub almond butter)
2 flax eggs (1 T flax meal + 2 T water per egg)
1 c. maple syrup
1 t. vanilla extract
1 t. baking powder
1 c. almond flour
1/2 c. cacao powder
1 c. chocolate chips (optional)
1/3 c. walnuts (optional)

Preheat oven to 350 degrees and grease an 8” or 9” baking pan.

Mix together sunflower butter, flax eggs, syrup and vanilla extract.

Mix in the baking powder, almond flour and cacao powder until well combined.

Fold in chocolate chips and walnuts.

Bake in oven for 30-35 minutes. Best enjoyed (at least to me) refrigerated overnight and served with ice cold almond milk or ice cream!
