Peanut Butter Banana Cake with Coconut Cream Peanut Butter Frosting

This cake has no refined sugar, it’s sweetened with maple syrup! Recipe adapted from @athleticavocado on Instagram.
1 c. natural smooth peanut butter⁣⁣
3 ripe bananas, mashed⁣⁣
1/4 cup pure maple syrup⁣⁣
1 egg, beaten (sub flax egg for vegan option)⁣⁣
1 tsp. baking soda⁣⁣
Peanut Butter Frosting 
1 14-oz can full-fat coconut milk⁣⁣
2-4 T. salted, natural creamy peanut butter⁣⁣
Pinch of stevia powder ⁣⁣
Preheat oven to 350 degrees.⁣⁣
Combine all ingredients in a bowl until mixture is smooth.⁣⁣
Spread batter into 9x9 or 8x8 square pan sprayed with cooking spray or lined with parchment paper.⁣⁣
Bake for 30 minutes, or until done. Let cool.⁣⁣
Chill your coconut milk overnight. In the morning, without shaking or tipping, scoop out the solid cream from the top into a bowl with the peanut butter and stevia. ⁣⁣
Use a mixer and beat until creamed together. Spread on the cake when it is cooled and be sure to refrigerate any leftover.
