the best banana bread recipe on the internet

2 c. flour (I used Pamela’s GF artisan mix)
1 t. baking soda
1/4 t. salt
3/4 c. brown sugar
2 eggs
1/2 c. butter, softened
3 very very overripe bananas

Preheat oven to 350 degrees F and grease a loaf pan with butter.

In a mixing bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended.

In a separate bowl, combine flour, baking soda and salt. Mix into the banana mixture and stir until moistened. Pour into loaf pan.

Bake on middle rack for 60 minutes. Let bread cool and then turn over onto a wire rack.
