lentil taco salad


1/2 c. dry lentils
1/2 c. fresh tomatoes, chopped
1 can organic green chilies
1 pack organic fajita seasoning mix 
1 t. olive oil

Boil lentils for about 20 minutes, then drain and heat in a frying pant with chopped tomatoes, green chilies, fajita mix, and a pinch of olive oil. Layer lentils on each plate with lettuce, corn, avocado, tomatoes, and GMO-free tortilla chips.
